STEAK ON A BUN

2 large sweet green peppers cut into thin slices

2 medium red onions cut into thin slices

3/4 cup mayonnaise

3/4 cup basil pesto

Fresh black pepper to taste

2 pcs. of steak - flank is fine (2 lbs)

1 cup red wine

1/3 cup olive oil

1 tbsp Italian herb blend

6 garlic cloves thinly sliced or crushed

 

Trim any fat off meat or silver skin. Slice across the grain and cut the meat into 5 pieces. Now combine the wine 1/4 cup of the oil, herbs, black pepper & garlic in a large sealable freezer

bag. Place the meat in the bag, shake and refrigerate for a min. of 4 hours, even a day is good. Now remove the meat from the bag and discard the marinade. Grill to the desired way and salt if you wish. Let steak stand for 5 minutes. Meanwhile heat the rest of the oil in the skillet, add the pepper and onions and cook until tender, set it aside. Next combine mayo & pesto in a bowl. Cut Italian buns in half and spread mayo & pesto in them, cut meat into smaller pieces, place on buns & top with pepper onion mix.
